Reconnect Over Fire: Takibi at Snow Peak Portland

A Hearth at the Center of Connection
“Takibi” translates to “bonfire” in Japanese, and Takibi places that elemental spark at the literal center of its space—with an open wood-burning hearth that merges cooking and dining.

It recreates the dynamic of a campsite fire, but within a softly lit room built of warm timbers, wraparound windows, and handcrafted touches.

Signature Dish: Snow-Aged Ramen
Takibi serves three ramen styles—Shoyu, Tori Shio, and Vegan Tonkotsu—all made with snow-aged noodles from Niigata. That ancient “Yukimuro” method enhances sweetness, texture, and depth—all powered by eco-friendly snow-aged storage The Shoyu ramen was recognized among Portland’s top 10 bites of 2024.

Cocktails, Sakes & Community
Bar director Jim Meehan has created a thoughtfully pairable beverage list: house cocktails like the Kumori and Mantis feature Japanese flavors, and the sake lineup highlights Niigata selections.

The Takibi Pilsner, crafted with Ferment Brewing of Hood River, channels that sense of gathering and shared moments snowpeak.com.

Design by Skylab: A Gathering Space
Skylab Architecture brought Snow Peak’s DNA of outdoor serenity into the interior: reclaimed Douglas fir beams, Heath Ceramics tile, bamboo table finishes, and mini flame lights at each table evoke a calm, tactile sense of the outdoors. Outdoor patio seating extends over 1,200 sq ft—with a living green wall to frame relaxed dining year-round.

Why Takibi Matters to Snow Peak
Takibi is more than a restaurant—it’s an expression of Snow Peak's gathering-first philosophy. As Snow Peak COO Matt Liddle puts it, "food, drink and fire are the essential elements of an outdoor gathering"—and by placing them at the center of their flagship, Takibi becomes a living embodiment of the brand mission.

Final Plate
Takibi offers something rare: a place where design, craft, and warmth converge. Whether you're starting your meal at the chefs’ hearth, sipping a sake at the bar, or exploring the heated patio, every detail connects back to camping, community, and care. For those who admire Snow Peak for its gear, Takibi is the chance to sit down—together—and taste that ethos in action.
